Stew from Limpias

 
 
 
 

INGREDIENTS

–   1/2Kg of haricot beans

–  1kg of cabbage

–  100gr. of fresh bacon

–  1 pig’s ear

–  1 ham knuckle

–  1 chorizo

METHOD

 

Leave the beans to soak over night.

Boil the beans in cold water. When the water reaches boiling point drain the beans and put them in a pot covered with cold water. Add the bacon, the ham and the pig’s ear whole. Cook for 1 hour.

Remove the meat and cut them in cubes before reintroducing it back into the pot and cook for another half an hour. Add salt and leave it.

This dish does not need oil or sauces as the meat contains enough fat. Continue cooking at a low heat til the beans are tender.

Next day the dish has a greater flavour.
