Anchovies in Vinegar

 
 
 
 

INGREDIENTS

 –  1/2 k. of fresh anchovies

 –  1 clove of garlic finely sliced

 –  Finely shopped fresh parsley

 –  Apple Cider Vinegar

 –  1 glass of water

 –  Salt

 –  Virgin olive oil

METHOD

 

First, meticulously clean the anchovies under the tap, removing the heads, intestines and bones untill obtaining individual fillets. It is recommended to cut the inner bone sides with scissors. Place the fillets in a colander to get rid of excess water.

Once the anchovies are drained we lay them on a plate creating a layer of fillets. We add salt and lay a second layer of fillets, and so on, adding salt to each layer of anchovies.

When all the fillets are laid we add the parsley and garlic.

We add the apple cider vinegar untill the fillets are covered and keep them in the fridge for 24 hours to rest. Once the fillets have rested add a glass of water and a generous stream of virgin olive oil and leave them to rest for another 4 to 5 hours.
